Just like in any other game, there are a lot of different ways to get rid of your old or unused gems in World of Warcraft. You can either vendor them, or you can disenchant them.

If you're not interested in either of those methods, you can also unsocket your gems. This is done by using a minor glyph, which is sold by a glyph trader.

Once you have the minor glyph, you need to use it on the item that has the socket that you want to remove the gem from. After that, the socket will be empty and you can put in a new gem.
